Crazy Vegetable Lady's Shepherd's Pie

This meal is a big hit here!

Shepard's Pie

Preheat 375

1 1/2 pounds ground beef
2 cups mashed potatoes
1/2 cup cauliflower puree
1/2 cup carrot puree
1/2 cup shredded cheddar cheese
1 cup peas (optional)
1 1/2 teaspoons McCormicks Montreal Steak Seasoning

1. In a large skillet, brown the ground beef over medium heat.  When the meat is browned add the carrot puree, peas, and seasoning. Stir often until the everything is warm.  Spread the mixture in a 8x8 baking pan.

2. In a medium bowl mix the cauliflower puree and mashed potatoes until well blended.  Spread on top of  the meat mixture.  Sprinkle cheddar cheese on top.

3. Bake at 375 for 25 to 30 minutes.  Let cool for 5 minutes.

Enjoy!
