Crazy Vegetable Puree Lady's Open-Faced Italian Chicken Sandwiches

These sandwiches are a yummy lunch. Jacob and Ashlynn give them 4 thumbs up!

Preheat 375

1 pound boneless, skinless chicken breast cut into 1 inch cubes
1/2 cup cauliflower puree
1 teaspoon Italian seasoning
4 whole wheat flat breads
2 cloves garlic minced
8 teaspoons Parmesan cheese
1/2 cup mozzarella cheese
olive oil

1. Heat oil in a skillet over medium-high heat. Cook chicken 8 to 10 minutes, stirring occasionally, or until no longer pink in the center.  Add garlic, cook for 1 more minute.

2. In a medium bowl, mix together cauliflower puree, Italian seasoning, and cooked chicken.

3. Place the flat breads on a baking sheet.  Top flat breads with the chicken mixture, Parmesan, and  mozzarella cheese.  Bake for 8 minutes, or until cheese is melted. Serve immediately.

Makes 8 sandwiches

That looks really yummy and I think my "vegetarian" child would eat. I will have to try it out on them:)
