Poached Eggs

Last Monday April from This Is What It's All About! left me a comment on my Meal Plan Monday post asking for my poached egg recipe. Here it is:

Poached Eggs



1. Fill a skillet with 1 1/2 to 2 inches of water, add a dash of salt. Bring to a low boil over medium-high heat. Crack eggs 1 at a time into a measuring cup, pour each egg into the water. Cook eggs for 2 1/2 to 3 minutes. Take each egg out with a slotted spoon, gently shaking off any water. Serve immediately,

Tip: I cook 3 eggs at a time, anymore than that I have a hard time not over cooking the eggs.

Yummy! We enjoy poached eggs ourselves. I add just a drop or two of white vinegar to help keep the egg whites together, so they don't foam up in the pan, other wise this is exactily how I make ours as well.
